Before you decide to disregard this strange sounding recipe — STOP!
It might sound a little on the not-so-tasty side, but I promise you, it is delicious! I’ll just be frank in saying that Kevin is known to be on the picky side from time to time. In fact, he doesn’t even like watermelon!
But when we had this last week on our trip out to Idaho, he could NOT stop eating it! And, it’s even little people approved as evidenced by the pic below of Naomi grabbing from the bowl and making a run for it.
So go out on a limb and try something new (and ridiculously easy) for your upcoming 4th of July barbecue. Trust me…you and your side dish will be the hit of the party!
Watermelon, Feta and Basil Salad

- 4 cups watermelon, cubed
- 4 oz feta, crumbled
- Chopped fresh basil to taste
- Toss ingredients together in a large bowl and serve immediately.
- C = 15g P = 5g F = 6g
