This is a delicious vinaigrette that can be used as a dressing or marinade for meat and veggies. One great way to enjoy it is in this recipe for One-Pan Glazed Chicken with Veggies or by tossing it with fresh cucumber, tomatoes and a little feta — Yum!
The best part is it takes only minutes to make and can easily be stored in a glass jar in the fridge for up to two weeks.
- 1½ cups extra virgin olive oil
- ½ cup apple cider vinegar
- 2–4 garlic cloves, chopped
- 1 t dried oregano
- 2 t dried parsley
- Sea salt, to taste
- Pepper, to taste
- Add all ingredients to a food processor or blender and mix until well incorporated.
